Strawberry Bliss Omelette

Eggs
1.5 cups

Fresh strawberries, sliced
2 oz
50 mL
Cream cheese, cut into 1/2" cubes
3 tbsp
45 mL
Brown sugar
2 tbsp
30 mL
Water
2 tbsp
30 mL
Butter (or margarine)
0.5 tsp
2 mL
Salt
dash
Pepper
Confection sugar

Step 1

In a bowl, beat the eggs, water, salt and pepper.

Step 2

Heat butter in a 10-in. non-stick skillet over medium heat; add egg mixture.

Step 3

As the eggs set, lift edges, letting uncooked portion flow underneath.

Step 4

When the eggs are almost set, sprinkle cream cheese, brown sugar and 1 cup strawberries over one side.

Step 5

Fold omelette in halt. Cover and cook for 1-2 minutes or until brown sugar begins to melt. Slide omelette onto a plate; top with remaining strawberries and dust with confectioners’ sugar.
