Instructions

  1. Take out a few of the best-looking strawberries and set them aside for the garnish. Hull the remainder of the strawberries and slice each berry into thin slices (1/2cm/1/4”).
  2. Mix up custard powder and sugar with 1/4 cup (50mL) of milk to a smooth paste. Can be cooked on stove top by adding to the remaining 2 cups (500mL) boiling milk while whisking constantly; boil for 1 minute and remove from element. Or in a larger microwaveable container add in remaining milk and cook on high for 6 minutes, stirring/whisking every 2 minutes. Cover and let rest for 5 minutes and stir again; let cool while making whipped cream, but needs to be kept warm (not hot) to pour over strawberries.
  3. With a hand mixer or in the bowl of a stand mixer, whip 2 cups  (500mL) of cream until it just holds stiff peaks. Add the confectioners sugar, vanilla and whip to combine.
  4. Spread a small spoonful of whipped cream on the bottom of a 9×13 inch baking pan, or a similarly sized platter. Lay down a layer of graham crackers to completely cover the bottom. Lightly cover the top of the graham crackers with more whipped cream; then a single layer of strawberries and very lightly spread half of the custard mixture on top of the strawberries. Repeat two times, until you have three layers of graham crackers. Spread the last of the whipped cream over the top and swirl it lightly with a spoon.
  5. Refrigerate for at least four hours, or until the crackers have softened completely. Garnish with additional berries.To make fan, simply slice berry 4 times and fan out pieces..

Options:

  • While we love the taste of strawberries and cream you could also use other fruits for layering; raspberries would be excellent too!
