Step 1
In a cocktail shaker, add ice, coconut water, spiced rum, bitters, and a splash of pineapple juice, then shake well.
Step 2
Strain cocktail shaker into old fashioned glass filled with ice.
Step 3
Top with Pollinator Gold Mead to taste and add slice of pineapple for garnish.
