Instructions:

  1. Pick out largest strawberries. Gently rinse strawberries in cold water and dry on absorbent hand or paper towel. Remove green hull and cut across the top of the strawberry and clean out with a paring knife or small melon baller. Slice a small part of the tip of the strawberry away for balance. Prepare all strawberries and refrigerate until ready to fill.
  2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add Cool Whip one half at a time and mix until blended. Add cream cheese mixture to a piping bag or Ziploc with the corner snipped off.
  3. Fill strawberries with cheesecake mixture. Once strawberries are filled, dip the top with cookie crumbs. If not serving immediately, refrigerate until serving.

 

Options:

  • You can also use shaved chocolate or graham cracker crumbs for topping.
  • Adult cream cheese mixture could have a small amount of liqueur added for extra flavour; amoretto gives a nice almond boost or triple sec for a orange accent.
  • These hollowed out berries can also be filled with chocolate pudding, and topped with white chocolate or coconut; Jello laced with a tasty liqueur, margarita mix thickened with clear gelatin (be sure to wet and line top edge of berry with salt) and a sprig of fresh mint.
