Step 1
In a cocktail shaker, muddle fresh mint and juice of half a lemon.
Step 2
Pour contents of cocktail shaker into a glass filled with ice.
Step 3
Top off glass with a 2-to-1 ratio of Pelee Island Gold Mead and Ginger Beer, or to taste.
Step 4
Gently stir, and garnish with lemon peel for an extra touch.
