For maximum flavour retention when freezing, coat berries in 175 mL (¾ cup) of sugar for every litre (4 cups) of fruit.
Alternatively try washing berries when pulling them out of the freezer instead of before freezing. This reduces their excess water content, maximizes flavour and makes freezing easier.
1 quart (1 L) = 1 ¼ to 1 ½ pounds (675-750 g)
1 quart = 4 cups whole strawberries or 3 cups (750 ml) sliced strawberries or 2 cups (500 ml) pureed strawberries. Yield: 4-5 servings
1 Pint (.5 L or 500 ml) = approximately 12 ounces (335-370 g)
1 cup (250 ml) sliced = 1 package (10 ounces) (283 g) of frozen sweetened strawberries
1 – 1 ½ quarts (1 – 1.5 L) = 6 cups (1 – 5 L) or enough to make a 9 inch (22.5 cm) pie
1 quart (1 L) = 1 batch cooked jam
Pop a mere eight medium strawberries for an entire day’s vitamin C; more than what’s contained in an orange.
A bowl (3/4 cup) of raspberries provides 4.5 grams of dietary fibre; as much as a bowl of bran flakes, plus more than 1/3 of the recommended intake of vitamin C.
