Part of our Single Varietal Series, this new cider features an old variety of crabapple called Dolgo. It's been a very popular choice for jellies for decades thanks to it's low pH. This particular vintage of Dolgo was aged for 24 months in barrels to allow the acid in the cider to become more balanced. To encourage the change from malic acid (think green apples) to a lactic acid (think sour cream or yogurt), we let this cider go through MLF or malolactic fermentation. This process helped us with allowing the true profile of the Dolgo Crabapple to shine through while the acid mellowed out.

Tasting Notes: Off-dry, oak and blueberry blossom on the nose with a bright full bodied apple with lingering pear and fresh apricot notes
Food Pairings: Goes well with an arugula salad with goat cheese, apples, pears, toasted walnuts and a glazed balsamic dressing
